Baking With Holly - Banoffee Cupcake

Banoffee pie is one of my all time favorite deserts! Especially Mums homemade Banoffee Pie....yummmy! I was flicking through a recipe book in a shop and saw Banoffee Cupcakes and I thought it was a great idea! This is actually a recipe I made up as I couldnt find a recipe that I liked the sound of. Everyone who had one said they were great so I think I will be sticking to this one :)

40z flour

4oz sugar
4oz butter
2 eggs
2 very ripe bananas (mushed up)
5-6 chewey toffees (chopped)
white and milk chocolate chips

  • Pre heat the oven to 190C and fill a cupcake tray with 12 paper moulds
  • Cream the butter and the sugar together till light and creamy
  • Add the flour and eggs bit by bit
  • Gently fold in the mushed up bananas, chopped toffee and the chocolate chips
  • Divide the mixture evenly between the paper cupcake moulds (should make 12)
  • Sprinkle extra toffee or chocolate over the top and bake in the oven for 10-15 minuets (or until spongy to the touch and a skewer comes out dry when inserted)
  • Leave to cool then serve
