Baking With Holly - Pancakes

Seen as last week was pancake Tuesday and, like every year, I seem to have had pancaked most nights since, I thought I'd share my pancake recipe. Maybe you'd like to try them out yourself :) They are yummy!!

You will need

  • 135g/4¾oz plain flour
    1 tsp baking powder
    ½ tsp salt
    2 tbsp caster sugar
    130ml/4½fl oz milk
    1 large egg
    2 tbsp melted butter
    bowl/jug x2
    frying pan
    any topping that you desire

1. Sift the plain flour, baking powder, salt and caster sugar together in to a bowl or jug (I used a jug so it was easier to pour later)  2. In a separate bowl/jug beat the egg, milk and melted butter 3. Add the egg/milk/butter mix to the flour/bp/salt/sugar mix and whisk well 4. Let it rest for a few minutes  and heat a frying pan with a little butter, not too much or it wont brown properly 5. pour the mix into the pan depending how big/thick/small/thin you want them. 6. cook for a minute or so on each side (untill slightly browned), then flip over 6. Transfer to a plate and cover them in deliciousness toppings and enjoy! It's as simple as that!

My favourite is the good old fashioned lemon and sugar but I do love chocolate, strawberries and maple syrup!
